Dinner Rolls-lean dough



餐包一般人覺得要加一堆ㄉ東東,才會好吃,其實不然,這dinner rolls 只有lean dough 成分: flour, water, yeast, vegetable oil, salt, sugar, plus 1tbsp of butter(just for the flavor)...這個自己修改ㄉ配方,去年聖誕節做過,後來一直實驗不同發酵時間,水分%,不同麵粉搭配,包括全麥及細全麥粉,fine-tuned ingredients,及烤箱溫度,上架位置,昨天再用當時修改ㄉ配方做一次,結果還是經得起不同麵粉,環境溫度,各種變數ㄉ考驗,成果類似,lean dough 只要程序做對,麵包一樣鬆軟軟綿...
