Taco*Homemade Tortilla


Tortilla是墨西哥餐廳常見ㄉ,像烙餅一樣ㄉ薄餅,本來是玉米粉做ㄉ,現在在美國大多是麵粉製成,功能眾多,光包不同餡,就有很多吃法,做成soft shell/hard shell taco, burrito, quesadilla, fajita, etc....附tortilla食譜做法...

Tortilla也是因為家裡常吃,反覆做之下,慢慢improveㄉ技能之一,這些是這個月初做ㄉ,後來又做幾次,也做ㄌquesadilla...


  1. 脹ㄉ像pita breadㄉtortilla...
  2. 一張張香氣撲鼻ㄉtortilla...烙好ㄉtortilla有一股香味...
  3. Guacamole通常是在旁邊ㄉ配料,我都直接包進去,好吃ㄉGuacamole,來自於選對成熟度剛好ㄉavocado,夠熟ㄉ,才有奶油般ㄉ口感,過熟則太爛,甚至會有瘀傷,選購時,按時稍軟,但仍然很firm,也要仔細觀察果皮及果蒂ㄉ新鮮度...
  4. 這次用ㄉ料: homemade refried beans, shredded mozzarella, cilantro, guacamole, roma tomato, sour cream, ground turkey cooked with taco seasonings...這次沒做salsa...
  5. 老公迫不及待要開動啦...

Tortilla食譜:
材料及作法: 杯(cup); 大匙(tablespoon); 小匙(teaspoon);

Dough:(to make 8 10 in. tortilla)2+1/2 杯 中筋麵粉(all-purpose flour)
1+1/4 杯 滾水
2 大匙 植物油(vegetable oil...I used grapeseed oil.)
2 大匙 sour cream (Daisy or any all-natural brand)可省,但麵粉要少加
1 小匙 鹽

1. Dough 材料攪拌,揉麵至光滑(silky)
2. 切成8塊,滾圓後,桿成10 in. 圓餅(整形如會回彈難整,讓麵糰休息(rest)15分鐘,再整形...)
3. 平底鍋用中火烙,兩面烙至膨脹,稍有棕色圓點,如上圖所示...
