Red Lobster Biscuits

(照片只有快照一兩張,大家湊合著看,因為香味一直飄散過來,所以沒心情照相,也想趁熱吃XD)

吃過Red Lobster's biscuits的人,應該都不會忘記它們的鬆軟及香味...這個biscuits食譜,幾乎和他們的味道一樣,甚至更棒,在家做,又可以確保沒添加shortening氫化油,及一些dough conditioners等等有的沒的添加物,這種quick bread做法相當簡單,現拌現烤,不到30分鐘,就有一盤香噴噴熱騰騰的biscuits上桌,K寶沒加啥就K了好幾個,暴龍抹上奶油,也K了好幾個...附食譜做法...

這批第一次做的biscuits,沒有Red Lobster's那麼fluffy,有可能baking soda加的不夠,也有可能baking soda不如baking powder的double acting效用,還有biscuits尺寸大小,另外我用unbleached flour,及參了一些全麥,也有影響,也有可能製作/烘焙過程,需要fine-tuning, anyway,有待進一步實驗...不過成品還是相當鬆軟,風味更是絕佳...



Red Lobster Biscuits 材料及作法:(12 biscuits)(1 cup=1杯=250ml, 1 tbsp=1大匙=15ml, 1 tsp=1小匙=5ml, 1 lb=454g)

  • 1 cups unbleached all-purpose flour
  • 1 cup unbleached 30% whole wheat blend all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp granulated sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dry chives

      A.將以上幾項,放在food processor, pause & blend well
     
  • 4 tbsp salted butter(cut into cubes)
  • 1/2 cup shredded sharp cheddar(original creamy color)


    B.將上列butter放入A中, pause幾次,像粗顆粒狀即可,再加入shredded chedder, pause幾次
     
  • 1 cup butter milk
  • 1/2 tsp baking soda

    將butter milk和baking soda混合攪勻,馬上倒入food processor, pause幾次,與B混合,大約成團即可,不要過度攪拌,倒出,大約分成12分,放上烤盤
     
    Baking:烤箱預熱至400F,烤18分鐘(依各家烤箱調整)
