美式酸奶鬆餅+超簡單自製紅糖漿*Butter Milk Pancakes with Brown Sugar Syrup

Buttermilk pancakes聞名,不是沒有原因的...最近暴龍又唸著要到IHOP去吃早餐,我就知道該開始做pancakes了,pancakes雖是再簡單不過的材料成份,外面賣的,還是可以加上一堆怪怪的東東,尤其是上面淋的syrup,暴龍一直用市面上知名的pancake syrup品牌,這個品牌在網路上查到的資料,據說幾十年前剛開始時,也是比較真材實料經營,加上一些昂貴的maple syrup,後來比例越來越低,到現在完全是便宜的corn syrup,加上molasses顏色及防腐劑組合,真是不顧品質,在網路上更讀到試吃試驗下,這些從小吃這種syrup長大的一代,竟然捨maple syrup,而比較喜歡化學成份的,這跟吃慣台灣添加物麵包長大的一代,也是同樣情形...附食譜做法...

Butter Milk Pancakes (7 pancakes)(1 cup=1杯=250ml, 1 tbsp=1大匙=15ml, 1 tsp=1小匙=5ml)

A.
  • 1 cup unbleached all-purpose flour
    (I used 30% whole wheat blend all-purpose flour)

B.
  • 1 egg
  • 1 tbsp vegetable oil
  • 1 cup butter milk
  • 1/4 cup + 1 tbsp whole milk
  • 1 tsp sugar
  • 1/4 tsp salt
  • 1/3 tsp baking soda

  • 將B料依次用打蛋器(wire whisk)(非電動)混勻
  • 加入打鬆的A料,攪勻致無顆粒均勻麵糊
  • 不鏽鋼平底鍋加熱,作熱度測試(水滴下時散成水珠,向四處滾去),轉至中小火
  • 麵糊(batter)攪勻,用1/3杯量杯取出,倒入平底鍋
  • 烙至麵糊起泡泡開始爆破,邊緣變色時翻面,每面約烙一分鐘
  • 趁熱淋上紅糖漿

  • Whisk and fluff up the flour
  • Place all the ingredients from B except baking soda in a mixing bowl. Whisk to mix welll.
  • Add the baking soda and mix well.
  • Add the flour from A and whisk until it becomes a smooth batter.
  • Heat a stainless steel pan and do water test. (Drop some water onto the pan. When you see it turn into beads and roll off to the side, then the pan is ready.) Reduce the heat to medium low.
  • Use a 1/3 measuring cup to scoop up the batter. When the batter starts bubbling up and bubbles just start popping, flip the pancake. Cook for another minute for the other side.
  • Serve them warm with brown sugar syrup and butter.

自製的紅糖漿,其實香味十足,非常接近maple syrup風味,而且非常經濟,無法購買昂貴的maple syrup的話,實在應該要試試紅糖漿,做法簡單,材料也隨手可得,實在沒必要買市售的pancake syrup...暴龍多年的使用市售pancake syrup壞習慣,在去年用過數次brown sugar syrup後,終於不再購買知名品牌pancake syrup,不但非常喜愛這簡單的homemade brown sugar syrup,對butter milk pancakes也讚譽有加,看著一大一小的滿足表情,一整天都相當開心了...

Brown Sugar Syrup
  • 1/2 cup brown/dark brown sugar
  • 1/4 cup water
將水和紅糖混合,加熱至沸騰,熄火,放稍涼後就是香味十足的pancake syrup
Mix the water and sugar. Bring the mixture to a boil. Turn off the heat. Let cool a little bit. Pour it onto warm pancakes.
