蜂蜜情人節麵包捲 Honey Valentine's Rolls

范倫泰節,Valentine's Day,就是大家誤稱的西洋情人節,其實並非情人的節日,而是向朋友/家人或其他人表達愛的節日,雖然還有約一個月,人總是喜歡把節日拉得越長越好XD,最好比別人先過,之後再繼續拖個一星期,就像中國人的新年,年前有臘七臘八,年後繼續慶祝到元宵節,才算結束新年的氣氛...附食譜做法...Updated Jan 18, 2014...


這Valentine's Rolls整形法,是綜合幾種麵包整形法完成,如果對作法中提到的幾種整形法有問題,可以Google一下YouTube,就會有一堆示範影片,所以在此不再多囉嗦,只提綱要,以免文章過度冗長...在烘焙過程中,眼見它們長成完美心型,再來變的有點豐腴,心想燕瘦環肥,也各有美感,再沒過幾分鐘,卻脹至肥美,雖然還是美,不過有點肥就是了,下次還有進步空間,烘焙就是這樣,很少有完美的第一次,總要再接再厲,一再試驗出完美目標...這個整形方式,其實就是palmiers餅乾的整形概念來的...


Honey Valentine's Rolls  (12 rolls) (KitchenAid Professional 600 standmixer製作,無standmixer,也可以像我以前手做麵包揉麵方式製作,差別不大)
材料及作法(1 cup=1杯=250ml, 1/4 cup=60ml, 1/3 cup=80ml, 1 tbsp=1大匙=15ml, 1 tsp=1小匙=5ml, 1 lb=454g)

2 cups unbleached bread flour
1 cup unbleached all-purpose flour
1 tbsp buttermilk powder (Regular milk powder will work.)
1 egg

A.將以上幾項,放在KA standmixer大鋼盆裡,用wire whisk攪拌均勻
Put all the above ingredients into the mixing bowl of a stand mixer fitted with a dough hook.

1 cup+1 tbsp water
3 tbsp granulated sugar
1+1/4 tsp salt
1+1/2 tsp active dry yeast (一般商用乾燥酵母,非速酵/麵包機酵母)
1 tbsp butter

B.將以上幾項,奶油除外,攪勻加熱至手觸溫暖後,慢慢分次倒入A中,同時用2速攪拌,攪拌成團,約5分鐘,打至成團即可,加入切成小塊奶油再打成均勻光滑麵糰
Mix all the ingredients except butter from B and stir until all dissolves. With the ingredients from A in the mixing bowl, turn on the stand mixer and set the speed to 2. Gradually pour in the B mixture. Beat until the dough forms and becomes smooth, about 5 minutes. Add cubed butter, mix until smoothe again. It's a slightly sticky dough. Shape it into a ball. Use a little flour to prevent it from sticking. Transfer it into a greased bowl and cover with a lid or plasstic wrap, then place the bowl in a warm oven with a pan of hot water underneath for fermentation.

Fermentation
第一次發酵至2-3倍大,倒出滾圓,鬆弛15-20分鐘,像切pie一樣,分成12份,整成球型,ie.,餐包整形法,鬆弛15分鐘,桿成長條,再用肉桂捲整形法,如黏手,可用一些麵粉防沾黏,再用法棍整形法整長條手法,捲好後,將其兩端向中間彎入成心型,表面噴水
Let the dough rise until double/triple in size. Take the dough out and shape into a ball. Rest for 15-20 minutes. Flaten it a bit and divide it into 12 pieces like cutting a pie. First shape them like dinner rolls. Then roll them out and shape them just like cinnamon rolls. Then stretch each of them out to about 1 foot long just like shaping baguettes. Take the two ends and curve them in to form a heart shape. Mist the dough surface with some water with spray bottle after shaping.

Proofing
入烤箱發酵,作第二次發酵,至2-3倍大
Place the shaped dough with the baking sheet in a warm oven with hot water underneath for fermentation. Let rise until double in size.

Baking
烤箱預熱至350F,烤20分鐘(依各家烤箱調整時間)
出爐後,趁熱刷上蜂蜜
Preheat the oven to 350F, and bake for 20 minutes. All ovens vary. Adjust your baking time accordingly.
Brush with some honey right after baking.


P.S. 麵包出爐,在拍照時,因為接近晚餐時間,暴龍一直在旁虎視眈眈,問:可不可以吃?一邊還直接伸手要拿,被我喝斥勸告後,才心有不甘的跑去看電視,我快快拍了幾張後,暴龍又出現,馬上拿了一個去吃,我一轉身做晚餐,再回頭,看到暴龍背對著我,鬼鬼祟祟,不知在做啥,等他離開,我再仔細一瞧,烤盤上已經缺了兩個麵包...
