優格草莓塔 Strawberry Yogurt Tarts

最近加州新鮮草莓紛紛上市,那天做了這一批草莓塔,不是用一般的puff pastry,想說健康一些,但是暴龍總是說,他要吃不健康的甜點,因為越不健康,越好吃,我心想這批健康甜點,大概銷路不佳,結果世事總是出人意料...附食譜做法...

本來今天早上(Jan 26),就要來寫這篇網誌,結果暴龍提醒我,下午得去K寶好朋友的birthday party,趕緊弄早餐,吃完早餐,把昨晚買的禮物包好,休息一下,又繼續煮午餐,再準備K寶要帶的泳裝及一些東東,出門前K寶穿了一層又一層,因為外面溫度還只有幾度F,外面一片白雪,室內游泳池到像有90F以上,池水也很溫暖,我和暴龍坐在池畔一邊看K寶和一群小朋友玩水,一邊和人閒聊,或上上網,回到家也近傍晚了...

Strawberry Yogurt Tarts (12 tarts) (KitchenAid Professional 600 standmixer製作,無standmixer,也可以像我以前手做麵包揉麵方式製作,差別不大)
材料及作法: (1 cup=1杯=250ml, 1 tbsp=1大匙=15ml, 1 tsp=1小匙=5ml, 1 lb=454g)

2 cups unbleached bread flour
1 cup unbleached all-purpose flour (I used 30% white whole wheat blend)
3 tbsp buttermilk powder (Regular milk powder is fine.)
2 tbsp of olive oil (Any kind of vegetable oil is fine.)

A.將以上幾項,放在KA standmixer大鋼盆裡,用wire whisk攪拌均勻
Put all the above ingredients into the mixing bowl of a stand mixer fitted with a dough hook.

1 cup milk
6 tbsp water
3 tbsp brown sugar
1+1/4 tsp salt
1+1/2 tsp active dry yeast (一般商用乾燥酵母,非速酵/麵包機酵母)

Mix all the ingredients from B and stir until all dissolves. With the ingredients from A in the mixing bowl, turn on the stand mixer and set the speed to 2. Gradually pour in the B mixture. Beat until the dough forms and becomes smooth, about 5 minutes. It's a sticky dough. Shape it into a ball. Use a little flour to prevent it from sticking. Transfer it into a greased bowl and cover with a lid or plasstic wrap, then place the bowl in a warm oven with a pan of hot water underneath for fermentation.

第一次發酵至2-3倍大,倒出滾圓,像切pie一樣,分成12份,滾圓,鬆弛15分鐘,桿平成長方形,再切成12等份長方形,將每份長方形刷上油,對摺,桿成1-2 mm厚之正方形,沿邊切平行線,寬度約5mm,兩對角不要切到底,對角邊拉起交叉,翻至另一邊,對齊底部,表面噴水
Let the dough rise until double/triple in size. Take the dough out and shape it roughly into a ball. Roll it into a rectangle. Divide and cut it into 12 rectangles. Brush each rectangle with some oil and fold it into a square. Roll each square to about 1-2 mm in thickness. Use a small pasta cutter and cut a 5-mm border around the square, but leave 5 mm each of the 2 opposite corners uncut. Pick up one outside point of the cut border and fold it across the square, aligning it on the opposite corner of the base. Pick up the other outside point of the cut border and cross over to the opposite corner of the base, aligning the edges. Press lightly with your fingertips to seal. Mist the dough surface with some water with spray bottle.

Place the shaped dough with the baking sheet in a warm oven with hot water underneath for fermentation. Let rise until double in size.

Preheat the oven to 350F, and bake for 20 minutes. All ovens vary. Adjust your baking time accordingly.

Mix plain yogurt with some granulated sugar to your liking. Top it with freshly cut strawberries.
