雛菊麵包捲(23%全麥&低油低糖) Daisy Rolls (23% Whole Wheat & Low in Sugar and Oil)

今天溫度突然高達40F以上,在冰凍許久的Minnesota,好像是春天來了,其實只是暖流罷了,周末夜間又要降到-2F,不過這一周,總算給大家鬆口氣,店裡開始賣起花草蔬菜種子,只是春天恐怕還有好幾個月,做些daisy rolls,解解冬天的悶氣XD,這批daisy rolls相當健康,材料也很簡單...附食譜做法(recipe included)...


多年以前剛開始寫部落格時,在一個部落格看到作者做了一個像這樣的大麵包,當時她說,她是在網路上看到別人做了這型麵包,又說她自己想了一下,就想出來是如何造型的,只是她最後並沒有說出她是如何做的,只是要大家動動腦筋想想,當時雖然好奇,也沒多想,因為我早期大多在練"麵包內功",直到現在才慢慢開始練"麵包外功",只是現在麵包做久了,也是一想就知道了XD,其實就是將大家熟知的毛毛蟲麵包,捲成圓圈罷了...往事歷歷在目,那個部落格也關閉了好多年,不知這位當年隨先生移居澳洲的部落格廚房好手,現在近況如何?


Daisy Rolls (8 rolls) (KitchenAid Professional 600 standmixer製作,無standmixer,也可以像我以前手做麵包揉麵方式製作,差別不大)
材料及作法(1 cup=1杯=250ml, 1/4 cup=60ml, 1/3 cup=80ml, 1 tbsp=1大匙=15ml, 1 tsp=1小匙=5ml, 1 lb=454g)

1+3/4 cups unbleached bread flour
1/2 cup white whole wheat pastry flour
1 tbsp sunflower seed oil

A.將以上幾項,放在KA standmixer大鋼盆裡,用wire whisk攪拌均勻
Put all the above ingredients into the mixing bowl of a stand mixer fitted with a dough hook.

1 cup water
1 tbsp brown sugar
1 tsp salt
1 tsp active dry yeast (一般商用乾燥酵母,非速酵/麵包機酵母)

B.將以上幾項,攪勻加熱至手觸溫暖後,慢慢分次倒入A中,同時用2速攪拌,攪拌成團,約5分鐘,打至均勻光滑麵糰,再將其滾成圓球後,放入有蓋的容器中,入溫暖烤箱中發酵,下分放置一盤熱水以利保溫及保濕
Mix all the ingredients except butter from B and stir until all dissolves. With the ingredients from A in the mixing bowl, turn on the stand mixer and set the speed to 2. Gradually pour in the B mixture. Beat until the dough forms and becomes smooth, about 5 minutes. It's a slightly sticky dough. Shape it into a ball. Use a little flour to prevent it from sticking. Transfer it into a greased bowl and cover with a lid or plasstic wrap, then place the bowl in a warm oven with a pan of hot water underneath for fermentation.

Fermentation
第一次發酵至2-3倍大,倒出滾圓,略壓扁,然後像切pie一樣,分成8份,滾成球型,鬆弛15分鐘,桿成約7英吋長橢圓形,用小型pizza滾輪刀,將半邊橢圓切鬚帶條,每條寬約一公分,不要切至邊緣,再用肉桂捲整形法捲起,捲好後將鬚帶末端與捲體捏緊,將其兩端接合成圓圈,表面噴水
Let the dough rise until double/triple in size. Take the dough out and shape into a ball. Flaten it a bit and divide it into 8 pieces like cutting a pie. First shape them like dinner rolls. Then roll them out and shape them into 7-inch long ovals. Use a small pizza cutter and cut half of each oval into 1 cm thick strips. Then shape them into cinnamon rolls from uncut ends. Seal ends of strips onto rolls. Take the two ends and connect them to form a ring. Mist the dough surface with some water with spray bottle after shaping.

Proofing
入烤箱發酵,作第二次發酵,至2-3倍大
Place the shaped dough with the baking sheet in a warm oven with hot water underneath for fermentation. Let rise until double in size.

Baking
烤箱預熱至350F,烤20分鐘(依各家烤箱調整時間)
出爐後,趁熱刷上蜂蜜,再灑上黑芝蔴子及細糖粉
Preheat the oven to 350F, and bake for 20 minutes. All ovens vary. Adjust your baking time accordingly.
Brush with some honey right after baking. Sprinkle with some sesame seeds and super fine sugar.
