Pineapple Coffee Cake (6 coffee cakes) (KitchenAid Professional 600 standmixer製作,無standmixer,也可以像我以前手做麵包揉麵方式製作,差別不大)

A.
1 cup unbleached bread flour
3/4 cup white whole wheat pastry flour (You can replace it with regular all-purpose flour.)
2 tbsp olive oil (Replace it with butter if you want richer flavor.)
1 tbsp buttermilk powder

Put all the above ingredients into the mixing bowl of a stand mixer fitted with a dough hook.

B.
1/2 cup whole milk
1/4 cup water
2 tbsp sugar
1 tsp salt
1 tsp active dry yeast (*Not instant yeast/bread machine yeast)

Mix all the ingredients except butter from B and stir until all dissolves. With the ingredients from A in the mixing bowl, turn on the stand mixer and set the speed to 2. Gradually pour in the B mixture. Beat until the dough forms and becomes smooth, about 5 minutes. It's a sticky dough. Shape it into a ball. Use a little flour to prevent it from sticking. Transfer it into a greased bowl and cover with a lid or plasstic wrap, then place the bowl in a warm oven with a pan of hot water underneath for fermentation.

Fermentation & Shaping
Let the dough rise until double/triple in size. Take the dough out and shape it into a ball. Flaten it a bit and divide it into 6 pieces like cutting a pie. First shape each piece into a small ball. Rest for 15 minutes. Take 1 ball and roll it out to a square. Divide the filling into 6 parts. Scoop one part filling and spread on to center part, about 1/3 of the square. Then use a pizza cutter to cut 8 strips on each of the two sides which aren't covered with filling. Fold the strips criss-cross over filling. Mist the dough surface with some water with spray bottle after shaping.

Filling
2 cups pineapple slices
1/4 cup water
1/4~1/3 cup brown sugar

Puree the mixture in the blender until smooth.
Then place the puree in a sauce pan.
Boil and stir constantly until the mixture thickens to almost paste-like.

Proofing
Place the shaped dough with the baking sheet in a warm oven with hot water underneath for fermentation. Let rise until double/triple in size.

Baking
Preheat the oven to 350F, and bake for 25 minutes. Cover it with foil for the last 5 minutes.
All ovens vary. Adjust your baking time accordingly. Brush with some honey after baking.

    1. Thanks, Zeloz! Ha, I would be too if I saw a recipe written in a foreign language which I'm not familiar with :P
Yes, it's Chinese. Most posts of 2013 and all posts of 2014 up to recent are in both languages.
Older ones were partially written in English. I thought about updating them but never got a chance.
No problem! If you're not using American bread flour, you might have to adjust the water ratio, usually to lower amount.
Let me know if you have any problem/question. I would be more than happy to answer it :)
