60%全麥糖漬黑豆蔓越莓核桃麵包 60% Whole Wheat Black Bean Cranberry Walnut Bread || 暴龍的氣話

這是為老爸老媽研究的60%全麥麵包,到第三天還是非常軟綿,老爸老媽注重健康,常吃全麥/穀類麵包,希望回台灣時,能有機會為他們烤這種全麥麵包...附食譜做法(recipe included)...05/04/2014 updated...

麵包因為高過儲存容器,所以頂上(crust)被我強迫壓扁了:P...核桃是做麵包時,才從整粒核桃,壓碎核桃殼取出,相當新鮮...

最近一直下雨,有幾次還下雪冰雨,April shower, May flowers,希望花季早點來!花園裡的風信子先開了,鬱金香還含苞未放,今年花季又遲了,哎...

今天去Walmart,本來只是要去買麵粉,因為只有他們,才有賣這家Montana的高海拔白春麥全麥麵粉,結果又隨手買了幾個大花盆,一大袋不知幾百磅的培養土,拖都拖不動,還麻煩了一位壯丁,來幫忙抬上車(怕他閃到腰,所以我和他兩人一起抬上車),再加一些花苗,外帶一棵果樹(plum tree),因為繫在樹上的照片,看起來好像台灣的梅子,不過是黃色,我想台灣的梅子,成熟時應該也是黃色吧,自從幾年前,在動物園看到他們有幾棵結果像梅子的樹後,就一直念念不忘,想種一棵,來醃梅子吃(也不確定是不是,只是看起來很像而已XD),只是一直沒找到,一般都是結大粒果子的plum tree,今天在Walmart,意外看到,價格又相當合理,也不顧自己的車,能不能塞下一棵樹,就興沖沖的買下來,後來真的是硬擠進車子裡(由前座椅斜躺到後車頂),還刮掉好幾個新芽,真心疼,現在才想起,把車頂天窗打開,也許就可以輕易塞入了,真是的...plum tree跟我回到家後,果然又受到暴龍的排擠,暴龍下班第一句話,就是"門口那棵啥樹已經進了垃圾桶!...",結婚這麼多年,我多少有些領悟,只好聲好氣的說:這是我買的最後一棵果樹啦!想來醃梅子吃...暴龍顯然還是氣不過,晚飯後又繼續碎碎念,說:那棵樹今天滾到路上去,是倒垃圾的人,把它扶回來的...我又好氣又好笑的說:我中午才買回來的,倒垃圾的早過了,在說啥啊?!...打字打到這兒,突然想到,下次應該說:真的!那我可要好好謝謝倒垃圾的先生...哈,因為暴龍沒事也喜歡吃倒垃圾先生的醋...

P.S.上網一查,原來我買的這一棵,是商業上兩大品種之一的中國品種/日本品種(Prunus salicina)(原產地是中國)(另一種是歐洲種),哈,我的直覺還真不錯,還挑到中國種,至於是梅子還是李子,就有待結果後,再來報備了,樹上是有幾個花苞,不過要結幾顆果子,或是一顆也不結,好像也不是我能決定的XD...再一查,哎,原來買到"小李子!","喳!",不過也不錯,到時候可以做糖漬李子糖葫蘆,ㄎㄎ...我們稱的梅子是Prunus mume...


60% Whole Wheat Black Bean Cranberry Walnut Bread (2 loaves)
(KitchenAid Professional 600 standmixer製作,無standmixer,也可以像我以前手做麵包揉麵方式製作,差別不大)
材料及作法(1 cup=1杯=250ml, 1/4 cup=60ml, 1/3 cup=80ml, 1 tbsp=1大匙=15ml, 1 tsp=1小匙=5ml, 1 lb=454g)

2 Glass Loaf Pans: (inch) 8.5" x 4.5" x 2.5"(height) or (cm) 21 x 11.5 x 6.5(height)
如果沒有玻璃長條烤盤,也可以用一般的長條烤盤/扁平烤盤,烘烤時間要自行調整
(*If you don't have a glass loaf pan, you can use a regular loaf pan/baking sheet instead. You might have to adjust your baking time.)

A.
1+1/2 cup unbleached bread flour
1 cup white whole wheat flour
1/2 cup white whole wheat pastry flour
2 tbsp olive oil
1/3 cup chopped walnuts
1/4 cup cooked & sweetened black beans
1/4 cup chopped dried cranberries
(*Add walnuts & cranberries in AFTER kneading is complete.)
(*Use ONLY speed 1 to mix in the walnuts & cranberries.)

將以上幾項,除了核桃,黑豆,和蔓越莓外,放在KA standmixer大鋼盆裡,用wire whisk攪拌均勻
Put all the above ingredients, except walnuts & cranberries, into the mixing bowl of a stand mixer fitted with a dough hook.

B.
1 cup whole milk
1/4 cup black bean soup (water from cooking black beans)
2 tbsp sugar
1+1/4 tsp salt
1+1/2 tsp active dry yeast (*Not instant yeast/bread machine yeast)

B攪勻加熱,至手觸溫暖後,慢慢分次倒入A中,同時用2速攪拌,攪拌成團,約5分鐘,打至成均勻光滑麵糰即可,再將其滾成圓球後,放入有蓋的容器中,入溫暖烤箱中發酵,下方放置一盤熱水以利保溫及保濕
Mix all the ingredients except butter from B and stir until all dissolves. With the ingredients from A in the mixing bowl, turn on the stand mixer and set the speed to 2. Gradually pour in the B mixture. Beat until the dough forms and becomes smooth, about 5 minutes. It's a slightly sticky dough. Shape it into a ball. Use a little flour to prevent it from sticking. Transfer it into a greased bowl and cover with a lid or plasstic wrap, then place the bowl in a warm oven with a pan of hot water underneath for fermentation.

Fermentation & Shaping
第一次發酵至2倍大,倒出滾成圓球,鬆弛15分鐘後,桿成長橢圓形,再將其像瑞士捲一樣捲起,表面噴水
Let the dough rise until double in size. Take the dough out and shape it into a ball. Rest for 15 minutes. Roll it out to an oval. Roll it up like a Swiss roll. Mist the dough with some water with spray bottle after shaping.

Proofing
入溫暖烤箱中發酵,下方放置一盤熱水以利保溫及保濕,作第二次發酵,約至2-3倍大
Put the shaped dough in a glass loaf pan. Place it in a warm oven with hot water underneath for fermentation. Let rise until double or triple in size.

Baking
烤箱預熱至350F,烤40分鐘,最後20分鐘用錫箔紙蓋上(依各家烤箱調整時間)
Preheat the oven to 350F, and bake for 40 minutes. Cover it with foil for the last 20 minutes.
All ovens vary. Adjust your baking time accordingly.
