80% Whole Wheat Yogurt Cranberry Honey Walnut Bread || 80%全麥優格蔓越莓蜂蜜核桃麵包

全麥麵包吃慣了,反而吃不習慣白麵包...照片中是最近做的芒果果醬,第二天就被掃光了,K寶喜愛,我不意外,因為她本來就愛吃芒果,暴龍也愛吃,我倒是有點意外...附食譜做法(recipe included)...

昨天K寶學校校長電話錄音,打電話來說,警察發現一隻熊,在附近街上出現,一年級和四年級去動物園遠足的小朋友,已改乘校車回來,並通知家長,如有不放心者,可以到學校接小孩,我想K寶沒去動物園,學校放學時,又有那麼多老師和家長志工,像往常一樣坐校車,應該沒問題,所以沒去接K寶,另一方面K寶也不愛我送她上下學,她喜歡坐校車和同學朋友玩...

不過熊在附近漫遊,倒是第一次聽聞,警察又說目前這隻熊行蹤不明...希望這隻迷路的熊,趕快去不遠的州立公園的廣大森林區,不然被抓到不知會不會被槍斃XD,哈開玩笑滴,應該考慮就近送給動物園,不過自由慣了的野生熊,大概會適應不良,警察大概會把熊載到Minnesota北邊廣大森林區放生吧...

暴龍下班後,我告訴他這消息,他說大概是不遠的州立公園廣大森林區跑出來的,想到我們以前常去州立公園森林散步,暴龍還三番兩次,自已為幽默的說:如果有熊出現,不用怕,只要不是隊裡跑的最慢的人,就沒問題...言外之意是讓跑得最慢的人,給熊作靶子,其他人就安全了,我看到K寶有點害怕,狠狠的瞪了暴龍一眼,這算是那門子的爸爸...以前還覺得state park裡,那會有熊出沒,現在連街上都出現了,state park出現熊,也不算稀奇了,看來以後還是小心一些...


80% Whole Wheat Cranberry Honey Walnut Bread (1)
(KitchenAid Professional 600 standmixer製作,無standmixer,也可以像我以前手做麵包揉麵方式製作,差別不大)
材料及作法(1 cup=1杯=250ml, 1/4 cup=60ml, 1/3 cup=80ml, 1 tbsp=1大匙=15ml, 1 tsp=1小匙=5ml, 1 lb=454g)

1 cup whole white wheat flour (hard spring white wheat)
1 cup whole white wheat pastry flour (soft winter white wheat)
1 cup all-purpose flour (30% blend of whole wheat)
1/4 cup plain yogurt
2 tbsp sunflower seed oil (can be replaced with any kind of vegetable oil)

A.將以上幾項,放在KA standmixer大鋼盆裡,用wire whisk攪拌均勻
Put all the above ingredients into the mixing bowl of a stand mixer fitted with a dough hook.

1/2 cup milk
1/2 cup water
2 tbsp honey
1+1/4 tsp salt
1 tsp active dry yeast (一般商用乾燥酵母,非速酵/麵包機酵母)

B.將以上幾項,攪勻加熱至手觸溫暖後,慢慢分次倒入A中,同時用2速攪拌,攪拌成團,約5分鐘,打至均勻光滑麵糰,再將其滾成圓球後,放入有蓋的容器中,入溫暖烤箱中發酵,下分放置一盤熱水以利保溫及保濕
Mix all the ingredients except butter from B and stir until all dissolves. With the ingredients from A in the mixing bowl, turn on the stand mixer and set the speed to 2. Gradually pour in the B mixture. Beat until the dough forms and becomes smooth, about 5 minutes. It's a slightly sticky dough. Shape it into a ball. Use a little flour to prevent it from sticking. Transfer it into a greased bowl and cover with a lid or plasstic wrap, then place the bowl in a warm oven with a pan of hot water underneath for fermentation.

Fermentation
第一次發酵至2-3倍大,倒出滾圓,表面噴水
Let the dough rise until double/triple in size. Take the dough out and shape it into a ball. Mist the surface with some water with spray bottle after shaping.

Proofing
入烤箱發酵,作第二次發酵,至2-3倍大
Place the dough with the baking sheet in a warm oven with hot water underneath for fermentation. Let rise until double in size.

Baking
烤箱預熱至350F,烤35分鐘,最後20分鐘用鋁箔紙蓋住(依各家烤箱調整時間)
Preheat the oven to 350F, and bake for 30 minutes. Cover it with foil for last 20 minutes. All ovens vary. Adjust your baking time accordingly.
