Bread Dough Basket & Chive Saltine Crackers || 麵包籃子及蝦夷蔥脆餅

K寶今天及明天學校停課,怕她在家無聊,乾脆給她上點烘焙課,既然上次做麵條時,看她這麼愛編織麵條,今天她一整天沒事,乾脆給她編個過癮,做個麵包籃子...附麵包籃食譜及作法(bread dough basket recipe included)...updated...脆餅裡的chives,是下雪前,從後院菜圃裡的最後一收...

麵包籃上部的蔴花辮,是K寶給的靈感,她編好籃子後,還不過癮,拿剩餘麵條,繼續編蔴花辮,我看到後,突然靈機一動,籃子上通常要有點東西,好遮住切過的痕跡,剛好拿來用...編織過程中,只建議了K寶,一般標準lattice派皮編織的方法,讓她的速度快些外,其餘都是"放牛吃草",讓她盡情玩...暴龍下班後看到成品大讚: Very creative!!...我讚許及驕傲的說:是K寶做的...但有點不好意思說:這種麵包籃子,應該不是啥創新玩意兒...只是這麵包籃子,完全是我們自己玩出來的,這點倒是真的...K寶一直捨不得吃,反覆說:好像真的籃子...直到我建議拍下"功夫破籃儀式",才嘗到這麵包籃子的滋味,香香甜甜酥酥脆脆,還真好吃...

看K寶編蔴花辮,每一編,都要確定麵條角度正確的執著時,不禁又再度注意到她的完美主義傾向,一則喜,一則憂,喜是因為做多事都要有完美主義態度,才能成功,但過程中,伴隨來的無數挫折感,及永遠做不夠好的人生態度負面力量,也常是不快樂的根源,學習如何適時放下完美主義態度,將是K寶的重要人生課題...


Bread Dough Basket (1)
材料及作法(1 cup=1杯=250ml, 1/4 cup=60ml, 1/3 cup=80ml, 1 tbsp=1大匙=15ml, 1 tsp=1小匙=5ml, 1 lb=454g)

A.
2 cups unbleached bread flour
1 cup unbleached all-purpose flour (30% blend white whole wheat)
1 tbsp sunflower seed oil


將以上幾項,放在大鋼碗裡,用wire whisk攪拌均勻
Put all the above ingredients into the mixing. Stir to blend well with a wire whisk.

B.
1 cup whole milk
2 tbsp sugar
1 tsp salt*
1 tsp active dry yeast (*Not instant yeast/bread machine yeast)

Resting
B攪勻加熱,至手觸溫暖後,慢慢分次倒入A中,同時用筷子攪拌,攪拌成棉絮狀,倒出揉成均勻光滑麵糰,放入有蓋的容器中,烤箱中醒麵30分鐘,下方放置一盤熱水,以利保溫及保濕
Mix all the ingredients above from B and stir until all dissolves. Gradually pour B mixture into A mixture in the mixing bowl. Stir with a chopstick to get the dough come together. Turn the dough out on the counter top and knead until smooth. Shape it into a ball. Place the dough into a bowl and cover with plastic wrap, then put the bowl in a warm oven with a pan of hot water underneath. Rest for 30 minutes.

Shaping**
將麵糰倒出滾圓,像切pie一樣,分成6份,各揉成球型,鬆弛15分鐘,將每一球桿成1~2 mm厚度之長方形,用刀及直尺切成寬約5 mm之長條,將長條交叉編織,捏緊周圍麵條以防脫落,將其覆蓋在倒放抹油之磁碗上(碗放在墊有烤紙的烤盤上),將多餘麵條切掉,另外用3股長條,像麻花辮一樣編長條,圍在底部
Take the dough out and shape it into a ball. Flatten it a bit and divide it into 6 pieces like cutting a pie. Then shape each piece into a small ball. Rest for 15 minutes. Then roll each ball into a rectangle. Use a sharp knife and a ruler to cut the dough into long strips. Weave the strips to a square. Press to seal the strips at all edges to prevent them from loosening. Place the woven dough onto a upside-down greased oven-safe bowl (oven-safe glass bowls, porcelain bowls, ceramic bowls, stainless steel bowls, etc.). Place the bowl on a baking sheet lined with parchment paper. Cut the extra dough off. Braid a dough strip to attach to the bottom of the bowl.

Baking
烤箱預熱至350F,烤20分鐘至表面呈金黃色(依各家烤箱調整時間)
Preheat the oven to 350F, and bake for 20 minutes or until golden brown.
All ovens vary. Adjust your baking time accordingly.



*這型pasta maker說明書有註明,不可加到麵糰裡,不知是為了麵條延展性問題,還是鹽會銹蝕電鍍金屬的機器表面,為了預防及小心起見,用後我都立即用微濕100% cotton抹布反覆擦拭(說明書並不推薦使用濕抹布),同時並沖洗抹布多次,務必將鹽分拭淨及保持機器乾燥 Please NOTE that instructions of this pasta maker model states "Do not add any salt to the dough! ".
