Merry Christmas!!!

這批水果蜂蜜杯子蛋糕,還真受歡迎,一下子就被全家老小掃光...
沒用小蘇打粉或泡打粉,是許多年前post的蜂蜜蛋糕食譜修改來的...附食譜做法(recipe included)....

iPad/iPhone magic!!! 相見恨晚!!!

沒想到今年聖誕節,暴龍竟然買pizza stone和digital scale,送我作禮物...
暴龍還說:這樣你烘焙時就可以量的比較準確了!
看來我以後得改用重量來量烘焙材料了...

比一般貴2~3倍的pizza stone是US made,完全天然黏土做成,沒有添加任何化學成份...
暴龍還諂媚的補上一句:我只買最好的給你...我雖然白了他一眼,心裡還是蠻開心的,今年聖誕節,暴龍不但沒買一些我用不到的東西作禮物,還買了我想要的東西...
而且他說的是實話,連電子秤也是那家百貨公司最貴的品牌,雖然我聖誕節後,可能就會拿回去換中等價位的,我覺得就很好用了…

現在都用iPad來寫網誌,直接用講的,不用再打中文了,真是太棒了,因為我中文打字超慢
以前寫網誌都要寫好幾個小時,現在中文打字部分,大概三十分鐘以內,看文章長短,甚至可以更快,就可以解決了,連標點符號都可以幫你標示出來,真是太神奇了!而且文字出錯率大概在3%以下,真是連PC也自嘆不如!很早就想要試試看iPad的speech recognition,但是一直超忙沒時間試試看,直到今天才試...一試之下,大為驚艷!害我廢話很多,文章越來越長...

好了,言歸正傳,還是來看看,這一批杯子蛋糕是怎麼做的…


Fruit-Topped Honey Cupcakes (8)
材料及作法(1 cup=1杯=250ml, 1/4 cup=60ml, 1/3 cup=80ml, 1 tbsp=1大匙=15ml, 1 tsp=1小匙=5ml, 1 lb=454g)

Muffin Pan: lined with paper muffin cups

A.
2 egg yolks
2 tbsp olive oil
2 tbsp clove honey
1/2 cup unbleached all-purpose flour
1 tbsp milk (optional, add this in if the mixture is too dry)

將以上幾項,除了麵粉和牛奶外,依序放在鋼盆裡,用wire whisk攪拌均勻,再篩入麵粉,攪拌均勻,如果太乾,難以攪拌時,再酌量加入牛奶
Put all the above ingredients except flour into a mixing bowl. Whisk to mix well. Sift flour in and stir to blend well.

B.
2 egg whites
1 tsp apple cider vinegar (regular vinegar, lemon or lime juice)
1/8 tsp salt
1/4 cup sugar

B材料,除了糖外,用電動打蛋器打到起泡,再慢慢加入糖,打至濕性發泡(soft peaks)即可,拿起打蛋器直立,蛋白霜是倒鈎狀下垂
Put all the ingredients except sugar in the mixing bowl, use an egg beater and beat until frothy. Gradually add in the sugar. Beat until soft peaks form.

將1/3~1/2的B蛋白霜,拌入A中,攪拌均勻後,分次慢慢倒回剩餘的2/3~1/2 B 蛋白霜中,攪拌匙貼鋼碗周邊拌入,再由底部翻起拌勻,至看不見蛋白霜為止
Put 1/3 B egg white mixture into A and stir to mix well. Pour the mixture back gradually to the remaining egg white mixture B  and fold it in. Fold in from the sides and bottom of the mixture until you don't see any egg white mixture.


Baking
烤箱預熱至350F,烤20~25分鐘,竹籤插入無黏屑即可
Preheat the oven to 350F, and bake for 20~25 minutes.
All ovens vary. Adjust your baking time accordingly.
