Wild Yeast Pancakes*Homemade Brown Sugar Syrup || 野生酵母美式鬆餅*自製紅糖漿

Wild yeast isn't that much different from commercial yeast...
Wild yeast can replace baking soda or baking powder to make yummy pancakes.

野生酵母和商業酵母的差別,並沒有大家想像的那麼大,
最主要要能摸清楚自己養的酵母習性及時間管理,
做起麵包或其他烘焙來,就能較得心應手…

野生酵母,一樣可以用直接法來做"酵母發酵式"美式鬆餅
並不需要用冰箱隔夜低溫發酵…附食譜做法(recipe included)


Wild Yeast Pancakes (7~8)

1 stainless steel frying pan 不銹鋼平底鍋1個

A.
150g  unbleached bread flour
100g  sourdough starter (See sourdough starter)

Put above ingredients into the mixing bowl.
將以上材料,依序倒入大鋼盆裡

B.
1 large egg
12g grapeseed oil
150g~180g warm milk
15g  sugar
2g  salt


1. Mix all the ingredients from B and stir until all dissolves.
    Gradually pour in the B mixture onto A. Stir until the mixture becomes a smooth batter.
    You should be able to draw a complete number 8 before the number disappears.

2. Put the covered bowls in a warm oven with a pan of hot water underneath for fermentation.
    The hot water helps maintain the temperature and humidity.
    It takes about 45~60 minutes to double the volume.

3. Heat a frying pan over medium heat until a drop of water rolls across the surface of the pan.
    Turn the heat down to medium low. Lightly grease frying pan with vegetable oil.

4. Pour 1/3 cupfuls of batter onto the frying pan, and cook until the edge is set and bubbles start to pop.
    Flip with a spatula, and cook the other side until brown , about 1~2 more minutes.

5. Serve with brown sugar syrup while the pancakes are still warm.


1. 將B拌均,倒入A中,再攪拌均勻,麵糊濃度在畫完8時,字跡就會消失
2. 放入溫暖烤箱中發酵,下方放置一盤熱水,以利保溫及保濕,發酵約45~60分鐘,體積增加約2倍大
3. 不鏽鋼平底鍋加熱,作熱度測試,水滴下時散成水珠,向四處滾去,轉至中小火,抹少許油
4. 麵糊攪勻,取1/3杯,倒入平底鍋,烙至麵糊起泡泡,邊緣變色時翻面,每面約烙1~2分鐘
5. 趁熱淋上紅糖漿


Homemade Brown Sugar Syrup
1/2 cup brown/dark brown sugar
1/4 cup water

將水和紅糖混合,加熱至沸騰,熄火,放稍涼後就是香味十足的pancake syrup
Mix the water and sugar. Bring the mixture to a boil.
Turn off the heat. Let cool a little bit. Pour it onto warm pancakes.
