Fluffy Healthy Yogurt Buns || 軟綿健康的優格餐包

優格是很健康的食物,加在麵包中也很不錯...
附食譜做法(recipe included)...



優格餐包 (12) KitchenAid Pro 600攪拌機製作

不鏽鋼烤模1個,抹上奶油

A.
高筋麵粉  300 
中筋麵粉  100克 (我用中筋麵粉混30%白春麥)

B.
原味優格  80克 
溫牛奶  100
溫水  100
白糖  35克  
鹽  6
乾酵母  3克 (*速酵用2克即可,最好直接混在A.麵粉裡)

C.
葡萄籽油  10克 (任何植物油/奶油皆可)


混合攪拌及揉麵
B攪勻慢慢分次倒入A中,同時用2速攪拌,攪拌成團,約7~8分鐘
打成均勻光滑麵糰後,慢慢加入葡萄籽油,再打成均勻光滑麵糰
(如果麵團打滑,加一點點麵粉,增加阻力)

基礎發酵
然後將其滾圓,放入有蓋的容器中,放入溫暖烤箱中發酵
下方放置一盤熱水,以利保溫及保濕
第一次發酵至2倍大

整形
倒出滾成圓球,像切派一樣,分成12份
鬆弛5~10分鐘後,一一滾圓
放入烤盤,表面噴水

後發酵
放入溫暖烤箱中發酵,下方放置一盤熱水,以利保溫及保濕
作第二次發酵,約至2-3倍大,手指輕按表面慢慢彈回即可

烘烤
烤箱預熱至350F(177C),烤18~20分鐘
依各家烤箱調整時間




Yogurt Buns (12) (KitchenAid Professional 600 stand mixer)

Butter one stainless steel baking pan 

A.
300g unbleached bread flour
100g unbleached all-purpose flour (I used AP flour with 30% blend of white whole wheat )

B.
80g plain yogurt  
100g warm milk  
100g warm water
35g granulated sugar    
6g salt  
3g active dry yeast (Or use 2g instant yeast. Sprinkle onto the flour in Adirectly.)

C.
10g grapeseed oil


Mixing & Kneading
Mix all the ingredients above from B and stir until all dissolves.
With the ingredients from A in the mixing bowl, turn on the stand mixer and set to Speed 2.
Gradually pour in the B mixture. Beat until the dough forms and becomes smooth, about 7~8 minutes.
Add the oil, beat until the dough becomes smooth again.
Shape it into a ball.
Place the dough into a separated bowl and cover with a lid or plastic wrap.

Fermentation
Put the bowls in a warm oven with a pan of hot water underneath for fermentation.
The hot water helps maintain the temperature and humidity.
Let the dough rise until double in size.

Shaping
Take the dough out and shape each into a ball.
Divide it into 12 parts. Rest for 5~10 minutes. Cover them with a damp towel.
Shape each of them into a ball.
Place the shaped dough in the baking pan.
Mist the dough with some water with spray bottle after shaping.

Proofing
Place the shaped dough with the baking pan in a warm oven with hot water underneath.
The hot water helps maintain the temperature and humidity. Let rise until double in size.

Baking
Preheat the oven to 350F(177C), and bake for 18~20 minutes.
All ovens vary. Adjust your baking time accordingly.
